We make plum wine… sort of. Maybe we didn’t? Apparently there’s more to plum wine than just fermenting plums? Yeah, I’m confused too. That is because it is confusingly named and thus often misunderstood. The problem being that it isn’t wine at all, but rather a liqueur made by steeping ume, or Japanese plum in some sort of liquor. Shochu is a common base spirit, but sak√© and brandy have also been used to soak ume. The fruit itself can cause complications as ume is more tart than their purple-hued cousins that we are more familiar. Those in the know compare Plum Wine to Vermouth or Sherry and suggest serving it on the rocks. Top grade varieties further their flavor profile by aging the finished product in oak. However, those of us in the USA find the sweeter brands to more readily available. This new found knowledge might inspire us to revisit this “wine” to see if we can recreate it more authentically.
